Fool Proof BBQ Chicken




Fool proof BBQ chicken.  

I was sick chicken that was burnt on the out side and raw on the inside.  I just lived with it for years until one day when necessity was the mother of invention.  I needed to make BBQ chicken for a dinner party but was running really short on time.  I decided to throw it in a pot of water on the stove, then throw it on the BBQ for the last few min to add the sauce.  I can never just let thing be (always gilding the Lilly) I added some salt, pepper, onion, and garlic.  The results were amazing the chicken was cooked all the way through moist tons of flavor and lower in fat because you cook some of it off while you cook it on the stove.

 Fool Proof BBQ Chicken:
This is recipe isn't rocket science it is so user friendly that I've my hubby can even do it.  I also love this method because you can use it for whole chickens, cut up chickens, legs and thighs, and wings.  I'm going to walk you through a recipe for 24 legs and 12 thighs.

Chicken apox 24 legs and 12 thighs
2 quartered unions
5 large garlic crushed
1 TBSP salt
1 tsp pepper 
enough water to cover the chicken plus about 2-3 inchs
The hardest part of this recipe is finding a pot that is big enough you need a pot that will fit all your chicken, enough water and have some head room.

Now bring the whole chicken mixture to a boil after the chicken starts to float boil it for an extra 20 min.  Now turn off the mixture and remove it from the heat.  You have two options you can just carefully pore it out in to a colander and then transfer and let it drain for a few min or you can carefully take the chicken pieces out of the pot and and put them in the colander and then let it drain for a few min.  The reason you might want to save the water the you just cooked the chicken is that you also just made AWESOME chicken broth. * (I'll go into that at the end)




Now that you chicken has drained you can now cook it on the BBQ you favorite way.  Another added plus to cooking it this way is that you don't get the flair ups the way you normally do.  There is a down side that the skin is a little slippery and comes off easily if your careful it's not a problem and if want a don't want skint it comes off easily and is till moist.






*Now you decided to take the hard way out and you have this pot of AWESOME chicken broth you have a ton of options.  1) You can leave it as is and put it in freezer safe containers and us it in your favorite recipes. 2) You can blend what you have left the fill ice cube trays then when you want to add a little umph to a dish just drop them in or 3) blend it then cook it down so its concentrated and do all of the above and 4)last but not least you can it with a pressure canner it takes a little skill but it is a sill worth learning.

Chocolate Mouthgasom Dip

 Well last night I had a horrible chocolate craving.  While looking for a fix I came across a recipe for Brownie Batter Dip.  Can I just say WOW!!!! The only problem is I didn't have all the ingredients for it.....so I had to improvise.  I did a little tweaking and came up with my own recipe.
 
Before
 Chocolate Mouthgasom Dip

16oz cream cheese (2 packages)
1/2 Cup Butter (1 cube)
1 Can sweetened condensed milk
6 TBSP Cocoa powder
1/8 Cup brown sugar
1 Cup Powdered Milk
1/8 Cup flower (wheat or rice)
1/2 tsp salt


At room temperature mix, cream cheese and butter.  Then add the condensed milk.  Let sit while you mix dry ingredients.  Then slowly add dry ingredients to the cream cheese mixture.

We ate them with pretzels.  We also used it as a fruit dip.  It is very yummy.  I think you could leave out the butter it only adds to the richness.  Also, you couldn't tell the difference between the two so if you are gluten free this is an option.

Poncho (first ever self designed pattern)


I am so proud of my self!!!
 
Why am I so proud of my self you might ask?   Well two reasons really.    First, because drum roll please..................I finished a project yes me, yes ADHD me finished a project with out starting another one and dropping the first one.  Second, I designed it all by my self.

My poncho design



 The idea behind the poncho was an Easter basket.  I thought these were Easter-ish colors, then I knitted it in a basket weave patter.  It lays at a diagonal rather then the traditional poncho triangle.  I still might add fringe to it I'm not sure (would that void my finishing my project pat on the back?)
 
I need to thank my GORGEOUS model B for modeling for me she was AWESOME!

Works in progress

Works in progress.  These are my current projects.  




This one I found at Deseret Industries (D.I.) for $5.00.  I love the round coffee table.  I can't wait until I finish this one.  I think I'm going to paint it pink with black, red and white accents.  I also plan on decoupaging the top with music notes cut out of sheet music.

 This one I found at a thrift store for a local crisis center.  It might be hard to see, but this is a porch swing.  I fell in love with it at first sight.  I'm not sure how I'm going to redo this one.  I know I'm repainting it the previous owner did a real spotty job on it.  I'm currently sanding it and reinforcing what is a little on the creeky 

  I look forward to using it this summer

Unique Easter Baskets that are eco friendly

My older girls came up with this idea.


Real hay in the basket!! At first I thought YUCK, but then I looked at them thee sooo CUTE!!!!

We had to change things up a bit. Like we didn't put loose jellybeans in the bottom like we normally do. Truthfully I never really liked that any way. The jellybeans always ended up gross and stuck to the bottom of the basket.





It didn't make any less mess but it is 100% environmentally friendly. When Easter was over we just throw the hay out for our goats


I never buy Easter baskets I can't stand buying something that will end up thrown away, so we used mixing bowls. I can use them later.











I still can't believe they ended up so cute.

Taking a new curve.


I've decided to add more to my blog and to really start doing some of the things I dream of. I'm so passionate about so many different things. I'm a schizophrenic crafter. I homeschool my 6 kids. I'm over weight and am always trying to rise above what that labels me as. A small homestead farmer, which includes natural and organic practices. I cook at home from scratch most of the time so I'm always looking for new recipes.

I was brought up on the motos "If you can't make it your self its not worth having", "Keep it Simple
Stupid" and "Families are Forever".

With these things in mind you will never know what I'll post about, but it should be fun. Sit back and relax like Tiny Mite here and enjoy the ride.
